Anand Kumar: A Culinary Journey of Passion, Leadership, and Global Excellence

Every chef has a story, but some journeys are defined not only by the dishes they create but by the lives they inspire, the teams they build, and the cultures they embrace. My journey in the culinary world is one such story—a journey that began with a dream and evolved into a lifelong pursuit of excellence.

Born with a passion for food and hospitality, I laid the foundation of my career at the prestigious Institute of Hotel Management, Catering Technology & Applied Nutrition in Kolkata. While many saw cooking as a profession, I saw it as an art form capable of bringing people together, creating memories, and telling stories through flavors.

My professional journey began in 2002 as a Kitchen Management Trainee at JW Marriott Mumbai. Those early years taught me the fundamentals of discipline, consistency, and the relentless pursuit of perfection. Long hours in the kitchen, learning from experienced chefs, and understanding the intricacies of luxury hospitality shaped my character and strengthened my commitment to the craft.

Driven by an unwavering desire to grow, I joined Hyatt Regency Mumbai, where I spent nearly a decade progressing through the ranks—from Chef de Partie to Sous Chef, Chef de Cuisine, and ultimately Executive Sous Chef. These years were transformative. Beyond mastering culinary techniques, I learned the art of leadership, team development, cost management, and operational excellence. It was here that I discovered that great kitchens are built not only on recipes but on people.

In 2014, I stepped into my first Executive Chef role at Hyatt Hyderabad. This was a defining milestone in my career. Leading large culinary teams and overseeing multi-outlet operations challenged me to think beyond the kitchen. I became responsible for shaping dining experiences, driving business performance, and mentoring future culinary leaders.

The following years took me across continents and cultures. From Hilton Bengaluru to the pristine islands of the Maldives at VARU by Atmosphere, I embraced opportunities to create innovative dining concepts while celebrating local ingredients and traditions. Every destination offered new lessons, new flavors, and new perspectives on hospitality.

My passion for pre-opening projects led me to some of the most exciting assignments of my career. I played key leadership roles in launching Emerald Zanzibar Resort & Spa in Tanzania, JW Marriott Goa in India, and later supported Melia Ngorongoro Lodge in Tanzania. Building a culinary operation from the ground up requires vision, resilience, and attention to detail. These projects allowed me to create culinary identities that reflected the spirit of each destination while delivering world-class guest experiences.

In 2023, I joined Melia Desert Palm Dubai as Executive Chef, where I led luxury culinary operations in one of the world's most competitive hospitality markets. Here, I focused on innovation, sustainability, team development, and creating memorable dining experiences that aligned with the highest international standards.

Today, as Executive Chef of The George Hotel in Lagos, Nigeria, I continue to push boundaries and redefine excellence. My role extends far beyond menu creation. I am a mentor, strategist, innovator, and leader committed to building strong culinary teams, driving business growth, and delivering unforgettable guest experiences.

Throughout my journey, I have remained a lifelong student of food. Whether exploring ancient cuisines, traveling to understand different cultures, hosting unique dining experiences, or sharing knowledge through cooking shows, podcasts, and industry forums, I believe learning never stops.

Looking back, my career has never been solely about reaching the next position. It has been about creating impact—on guests, colleagues, businesses, and the culinary industry itself. From a young trainee in Mumbai to leading luxury hotel kitchens across four continents, every step has reinforced one belief:

Food is more than nourishment. It is culture, emotion, memory, and connection.

And my journey is far from over.

My work style is built on a simple philosophy: great food comes from great people, strong systems, and an unwavering commitment to excellence.

With more than two decades in luxury hospitality across India, the Maldives, Tanzania, the UAE, and Nigeria, I have developed a leadership approach that balances creativity with operational discipline. I believe that a successful kitchen is not driven by one chef alone but by a motivated and empowered team working towards a common vision.

I am a hands-on leader who leads by example. Whether it is a busy service, a pre-opening project, or a large-scale banquet operation, I remain actively involved in guiding my team, maintaining standards, and ensuring that every guest receives an exceptional dining experience.

People development is at the heart of my management style. I invest significant time in mentoring young chefs, identifying future leaders, and creating a culture of continuous learning. I believe that when individuals grow, the entire organization benefits. Many of the chefs I have trained throughout my career have progressed into leadership positions, which remains one of my proudest achievements.

I am highly organized and process-driven, with a strong focus on food safety, cost control, sustainability, and operational efficiency. My experience in pre-opening hotels and resorts has taught me the importance of building strong systems, clear communication channels, and accountability at every level.

Creativity is equally important to me. I enjoy exploring local cultures, understanding regional ingredients, and translating those influences into innovative culinary experiences. My approach to menu development combines guest preferences, market trends, business objectives, and authentic storytelling through food.

I believe in fostering a positive workplace culture where respect, collaboration, and professionalism are non-negotiable. During challenging situations, I remain calm, solution-oriented, and focused on achieving results while supporting my team.

Above all, I never stop learning. Whether traveling to discover new cuisines, participating in culinary forums, hosting cooking demonstrations, or exploring emerging food trends, I continuously seek opportunities to grow both personally and professionally.

My goal is not simply to manage kitchens but to create memorable experiences, build high-performing teams, and leave a lasting impact wherever I work.
